BBQ: Many people misuse the term barbecue. It
has come to be applied to anything cooked on a grill,
or even in the oven if a spicy tomato based sauce is
applied. Barbecue is not a dish, or a cooking device,
it is a method of cooking. Coopers BBQ Company makes
“old style” BBQ in large pits, using Western
Mesquite wood to slowly cook the meats.
Western Mesquite is a natural aromatic
hardwood native to Arizona, Texas and Mexico. The mesquite
used has to be thoroughly dried, so that the tar or
pitch natural to the wood is gone. Mesquite provides
a hot, even burning coal, so that meats are not exposed
to hot spots on the grill. Mesquite smoking imparts
a distinct, sharp flavor into Cooper’s grilled
and smoked entrees.
